Hey all, I have herd about and been told to try the UJSSM recipe for my pot still. I Have looked in the recipes section here but cant find it!! probably the birdwatchers with bourbon essence clouding my vision .

There are ways to get around boiling your mash. The first is to just add a bunch of sugar (see the ujssm recipe). The other is to pitch bacteria that breaks starches down at room temperature (Yellow label angel yeast). If none of these are feasible for you, the alternative is to use flaked maize.

The flavor can shift some, so it's worth experimenting with. I remember doing an experiment with cooked/non-cooked and couldn't really tell that much difference in the final product. Also, this recipe gets a lot of it's flavor from multi-generational backmashing. It's the sour mashing that makes it really good. I'd say it's up to you really.
